Today I recommend soft and yummy oatmeal cookies. They consist of healthy oatmeal, a bank of vitamins. Oatmeal is healthy because of vitamins it consist, for example:
- B6 – improves memory and concentration and prevents anaemia,
- B1 and panthotenic acid – prevent fatigue and irritation.
Oatmeal is also a source of magnesium, iron and dietary fibre, therefore I encourage you to tray out this recipe.
270 g of butter (at room temperature)
1 cup of brown sugar
2 tbsp. of vanilla extract
2 1/3 cups of flour (all-purpose)
2 ½ cups of oats
½ tsp. of salt
½ tsp. of baking powder
1 tsp. of baking soda
100 g of candied orange theme
200 g of white chocolate
Cut chocolate into small dice. Stir butter, brown sugar, vanilla extract and eggs together in a medium bowl. Combine flour, baking powder, baking soda, oats and salt in a separate bowl. Add the mixture to the butter. Pour chocolate and candied orange theme and mix everything by hand.
The dough will be sticky.
Roll the dough into walnut sized balls and arrange the balls a baking sheet. Flatten each cookie by hand or using fork. Keep a large distance between each cookie because the cookies grow.
Bake them for 12-14 minutes in a preheated oven to 1800C.
